Another BANGER from Michael Ruhlman. He’s just the best really. Why are these books of his own, rather than his collabs (Thomas Keller, Eric Ripert etc), not printed in the UK???!!! Who cares I guess BECAUSE YOU CAN BUY THEM HERE!!! This is an entire book devoted to the best of all the fats, chicken fat. Lots of great, classic Jewish recipes and tonnes of other stuff, not Jewish at all, just really good ways of using schmaltz.
