Another BANGER from Michael Ruhlman. He’s just the best really. Why are these books of his own, rather than his collabs (Thomas Keller, Eric Ripert etc), not printed in the UK???!!! Who cares I guess BECAUSE YOU CAN BUY THEM HERE!!! This is an entire book devoted to the best of all the fats, chicken fat. Lots of great, classic Jewish recipes and tonnes of new stuff too, that isn’t Jewish at all. Whichever it may be, these are just really good ways of using schmaltz, after you’ve learned to make it.
