Anne Willan (food historian, scholar, cookery school founder and total legend) is SUCH A GOOD COOK - totally understanding of deliciousness and the building of levels of flavour, and so good at cherry picking from France’s regional cuisines, that the recipes in this book are CULINARY GOLD. The Daube is out of this world and if this isn’t the best recipe in the world for French Onion Soup (aka Gratinée Lyonnaise) THEN I DON’T KNOW WHAT IS!!!!
