For his sins a nouvelle cuisine pioneer. Up there with the frères Troisgros and Paul Bocuse et al for his influenece on (French) cuisine. One of the greats and you’ll learn as much about how he thought about food as how he cooked it from reading these guys. I am selling them as a pair, and as a pair only because I believe that any self-respecting proper cookbook collection would be incomplete without both of them and these are lovely OG editions.
