Ruhlman’s only gone and done it again. This book won him LOADS of awards, James Beard etc etc. He takes 20 things that are really important in cooking (onions, eggs, sugar, sauces, batter - all kinds of stuff) and explains them and their complexities and uses, and tells us how to do things with aplomb. There’s great, instructive photos (LOOK at that Roast Chicken Sauce recipe I’ve banged in the photos!!!) and you will be a better cook, with a better understanding of ingredients, methods and cooking generally, as a result of using this book.
