This (the English version of Jules’ Le Livre de Cuisine) was translated by Jules’ brother Alphonse, who was Queen Victoria’s pastry chef. This is no way near as inaccessible as you might imagine for a book this old and full of amazing things still very familiar to us today (plus mad shit like Potted Ortolans too obvs hahahahah).
